Caprese-style Grilled Cheese Sandwich w/ Avocado
4 slices multi grain bread
1 avocado, sliced
Shredded Mozzarella cheese as needed
1 medium tomato, sliced
Few spinach leaves
Few basil leaves
Salt & black pepper to taste
2 tsp avocado oil
Place mozzarella cheese on 2 slices of bread. Top each slice with spinach, sliced tomato, basil, and avocado slices. Sprinkle with salt and black pepper. Next top each with a bread slice.
Heat a non-stick skillet greased with avocado oil over medium high heat.
Place each sandwich on the skillet and cook for 2-3 minutes or until golden brown in bottom.
Flip sandwich over carefully and cover with a lid. Cook for 2-3 minutes or until cheese melts.
Serve warm with dill pickles.
