Caramelized Onion & Goat Cheese Tartlets - 2 ways
1 (12 mini) package phyllo shells
1 (4-ounce) package herbed goat cheese
2 tbsp Greek yogurt
1 cup diced onion
1/2 tsp freshly ground black pepper
2 tsp chipotle sauce
Thyme sprigs for garnishing, if desired
1 tbsp olive oil
Preheat oven to 400F.
Heat oil on a pan over medium-high heat. Cook the onions in the pan for 10 minutes or until browned and softened.
Divide the goat cheese into two parts and keep in separate bowls.
Add one tablespoon yogurt to each goat cheese bowl and mix well.
Add the black pepper powder into one bowl of goat cheese and chipotle sauce into the other. Mix each goat cheese mixture until well combined.
Fill each phyllo mini tart with a tablespoon of goat cheese mixture. Top each tart with a teaspoon of caramelized onion.
Bake in the oven for 10 minutes or until golden at 400F.
Remove from oven and let cool. Garnish with thyme if desired. Serve.
