Chicken with Coriander
An easy and healthy chicken dish cooked with coriander leaves (cilantro).
500g chicken, cut into pieces
6 cloves garlic
1 inch fresh ginger
4 green chilies
1 bunch fresh coriander leaves (cilantro)
2 tbsp oil or ghee
Juice of 1 lemon
1 tsp black pepper powder
1 ½ tsp salt
Chop the onion and ginger finely. Grind the coriander leaves, green chilies, and garlic into a paste.
Rinse chicken pieces and pat dry. Mix the coriander paste with the chicken pieces.
Heat the oil in a saucepan over medium flame. Put the chopped onion and ginger in the pan and fry for 3 minutes.
Stir in the chicken pieces with 1/2 cup water. Cover the pan tightly, reduce the heat to low and cook for 30 minutes.
Remove the cover and stir in the lemon juice. Sprinkle with black pepper. Remove from heat and serve.
