Chicken Curry with Bamboo Shoots
This is a simple, earthy, North-East Indian style chicken curry made with bamboo shoots.
300g chicken, cut into portion size pieces
2 tbsp bamboo shoots, shredded & fermented
1 bunch coriander (cilantro) leaves, chopped
1 tbsp oil
1 medium onion, chopped
1 tsp green chilly paste
1 tsp turmeric
Salt as needed
2 medium tomatoes, chopped
1 1/2 cups hot water
Rub the chicken pieces with turmeric and salt and set aside to marinate for 10 minutes.
Heat the oil in a large pan. Add the onion and cook for 3 minutes.
Add the chicken pieces, bamboo shoots, tomatoes and chilly paste to the pan. Pour the hot water, cover and cook for 15 minutes.
Mix in the coriander leaves and remove from heat. Serve with rice.
