Chicken Do Piaza

1 kg chicken, cut into small pieces
250g onion, finely chopped
2 tbsp onion paste
2 tsp ginger paste
1 tsp garlic paste
½ tsp turmeric
1 tsp chili powder
1 tsp sugar
1 tsp garam masala
3 bay leaves
Salt as required
Whisk the yogurt in a small bowl until smooth.
Add the ginger paste, garlic paste, onion paste, turmeric, chili powder and sugar and mix well.
Coat the chicken pieces with the yogurt marinade and leave in refrigerator for 1 hour.
Heat the ghee in a large sauce pan. Fry the onions until browned.
Remove the onions from the pan and set aside.
Add the bay leaves to the remaining ghee in the pan.
Add the garam masala and chicken and fry for 2 minutes.
Add salt and pour in 2 cups water. Bring to a boil, reduce heat and simmer for 20 minutes with the lid on.
Remove from heat. Garnish with chopped coriander and sliced onions. Serve with rice.
