Chocolate Coconut Puffs w/ Pecans
2 egg whites
1/2 cup sugar
1/4 tsp salt
1/2 tsp ground cardamom
1 1/3 cup unsweetened finely shredded coconut
1/2 cup pecans, finely chopped (substitute with any nuts of choice)
1 4oz pkg. semi-sweet chocolate chips, melted
Ina a medium bowl, beat the egg whites until stiff and peaks form.
Whisk in the sugar, salt, cardamom and vanilla.
Fold in the shredded coconut, melted chocolate, and pecans into the egg whites.
Scoop spoonfuls of the mixture onto lined baking sheets keeping them separated from each other by at least an inch.
Bake at 300F in a preheated oven for about 10-15 minutes.
Remove from oven and let cool. Serve or store in an airtight container for later use.
