6 hrs (includes inactive time)
1 clove garlic, crushed
1 tsp fennel seeds
2 tsp granulated sugar
½ tsp salt
2 shallots or 1 small onion, finely sliced
½ cup rice or white wine vinegar
¼ large cucumber, unpeeled & finely diced
Grind garlic, fennel seeds, sugar and salt to a paste with a mortar and pestle. Or, use a food processor to grind the ingredients
Mix with the shallots or onion, vinegar and cucumber.
Set aside for 6-8 hours to allow flavors to develop.
Serve as a condiment with fish, meat or any vegetarian main dish.
