Dark Chocolate Walnut Brownies
1/3 cup butter
1/2 cup dark cocoa powder (100% cacao)
1 cup sugar
1/2 tsp vanilla extract
1/2 cup coconut flour
1 cup walnuts, chopped
1/2 cup dark chocolate chips (optional)
Preheat oven to 350F. Grease 8x8 baking pan and set aside.
Melt butter in a medium saucepan over low heat. Add cocoa and blend well with the butter on low heat. Remove from heat, cool and set aside until later.
Put the sugar, eggs and vanilla in a medium bowl. Mix and blend well until combined thoroughly.
Pour the mixture into the cooled cocoa mixture and blend well.
Add the coconut flour and stir until blended thoroughly and no longer lumpy.
Fold in the chopped walnuts. Stir in the chocolate chips if using.
Pour mixture into baking pan and bake for about 30-35 minutes until a toothpick inserted in the center comes out clean.
Remove from oven and let cool completely. Cut into squares and serve.
