Date & Bean Spread
1 cup canned kidney beans, drained & rinsed (substitute with black beans)
2 tbsp dates, pitted & chopped
½ cup cashews, chopped
1 tbsp fresh mint leaves, chopped
2 tbsp maple syrup or to taste
1 tsp pure vanilla extract
Salt to taste
¼ tsp ground cardamom
Place the kidney beans, dates, mint, cashews, maple syrup, vanilla, salt and cardamom in a food processor and process until smooth or to desired consistency.
Serve with crackers, bread or sliced, raw vegetables.
