Greek Peasant Salad
A cooling Mediterranean salad that goes well with any summer meal.
1 pound cucumbers
2 pounds ripe tomatoes, cut into chunks
1/2 cup fresh mint, chopped
1/2 cup olives, pitted
1/4 cup fresh dill, chopped
1/2 cup feta cheese, crumbled
1 tbsp olive oil
1/4 tsp salt
1/8 tsp ground black pepper
2 tbsp fresh lemon juice
To make the dressing, whisk together lemon juice, olive oil, salt and black pepper in a small bowl.
Peel each cucumber in evenly spaced lengthwise strips. Dice cucumbers into 1/2 inch pieces.
Put cucumbers, tomatoes, olives, mint, dill in a big bowl. Drizzle with dressing and toss well to coat. Sprinkle with crumbled feta cheese and serve.
