Greek style Spinach Pasta w/ Shrimp & Hearts of Palm
This Greek style pasta is healthy and hearty.
1 pound shrimp, deveined & shelled
1 16-ounce package spinach spaghetti
1 can diced tomatoes
10 garlic cloves
¼ cup extra virgin olive oil
1 cup Kalamata olives, pitted, drained & chopped
1 cup crumbled feta cheese
1 can Hearts of Palm, drained & sliced
1 tsp red pepper flakes or to taste
Freshly ground black pepper to taste
Fresh parsley leaves for garnishing
Salt to taste
Cook spinach spaghetti according to package directions. Drain and set aside.
While spaghetti cooks, heat the oil in a large pan. Add garlic and tomatoes and sauté for 3-4 minutes.
Add shrimp and sauté for another 3-4 minutes.
Add red pepper flakes, salt and black pepper to taste. Toss with spaghetti, hearts of palm, and olives. Garnish with parsley and feta cheese. Serve.
