Hog Plum Relish
500g hog plums
1 tsp panch phoran (5 spice mix)
1 dry red chilly
1/2 tsp salt
1/4 tsp turmeric
1 cup sugar
1 tbsp mustard oil
1/2 tsp chilli powder
1 tsp ginger powder
Boil the hog plums in a pan for 5 minutes and remove from heat.
Drain the water from the hog plums. Remove the pulp and discard the seeds. Mash the pulp until smooth.
Heat the oil in a medium pan. Add the red chilly and panch phoran seeds.
Cook for 1 minute and then add the pulp over low heat.
Add the salt, turmeric and chilli powder and stir to combine.
Add 1/2 cup of water, sugar and ginger powder to the pan. Stir to combine.
Cook for about 6 minutes until it thickens.
Remove from heat and serve.
