Loaded Sweet Potato Bites
2 large sweet potatoes, peeled & thickly sliced
1 tbsp olive oil
½ tsp dried rosemary
Salt & freshly ground black pepper to taste
1 - 1 ½ cup cooked chili
1 cup shredded Monterey Jack cheese
Sour cream or Greek yogurt to garnish
Sliced green onions to garnish
Preheat oven to 425F.
Toss the sweet potato slices with olive oil, salt, black pepper and rosemary. Place slices on a lined baking sheet.
Bake for 30 minutes and flip slices over after 15 minutes of baking.
Top the sweet potato slices with chili and sprinkle with the shredded cheese. Bake for another 3-4 minutes or until cheese melts.
Remove from oven and cool. Top with sour cream, garnish with sliced green onions and serve.
