Macadamia Bourbon Brownies
1 cup all purpose flour (gluten free, if desired)
1/3 cup unsweetened cocoa
1/4 tsp salt
1 cup sugar
1/4 cup coconut oil
1/4 cup bourbon
2 large eggs
1/4 cup macadamia nuts, chopped
Preheat oven to 350 degrees.
Coat an 8-inch square pan with cooking spray or use parchment paper to line pan.
Measure 1 cup flour into a measuring cup and level with a knife. Mix flour, cocoa, salt in a bowl and stir with a whisk.
Mix sugar, oil, bourbon and eggs in a separate bowl.
Stir in flour mixture into the egg mixture. Mix in the macadamia nuts.
Pour batter into the baking pan and bake for 18 minutes. Insert a wooden pick into the center to check that it comes out almost clean.
Remove pan from oven and cool on a wire rack. Cut into pieces when cool.
Adapted from a Cooking Light recipe. Use gluten free, all-purpose flour only if desired. Also, you can substitute the bourbon for any other liqueur of your choice.
