Mexican Quick Fried Rice
½ cup uncooked rice
2 tbsp oil
1 small onion, sliced
½ cup shelled peas
1 medium carrot, sliced
1 medium tomato, diced
1 ½ cup chopped mixed vegetables (celery, mushrooms, bell pepper or anything you have)
1 cup water
Salt to taste
Heat the oil in a pan over medium-heat.
Rinse and drain the uncooked rice. Add to the pan and fry until the grains turn golden.
When the rice is almost done, add the chopped vegetables and salt.
Fry the ingredients stirring constantly for a few minutes.
Add water before the rice gets too dark. Cover and simmer for about 20 minutes until rice is done. Remove lid from pan for the last few minutes of cooking if the rice looks gummy, stirring occasionally.
Remove from heat and serve with hot sauce or salsa and tortillas.
