Microwave Sweet Potato Fudge

1 can sweet potato puree
1/3 cup creamy peanut butter
2 cups milk chocolate chips
1 tsp vanilla extract
Combine the sweet potato puree and vanilla extract in a bowl and set aside.
Line a baking dish with foil and spray with nonstick cooking spray.
Mix chocolate chips and peanut butter in a microwave-safe bowl and microwave at medium power (50%) for 1 minute to 1 ½ minutes.
Remove bowl from microwave and stir until bowl no longer feels warm.
Continue heating at 15-30 second intervals on medium power stirring until chocolate is completely melted. Chocolate and peanut butter must be well blended and smooth.
Combine the sweet potato puree into the chocolate peanut butter mixture.
Pour the mixture into the lined baking dish and refrigerate for several hours, preferably overnight.
Cut and divide fudge into bite size squares. Serve.
