Red Wine Chocolate Mousse
1/3 cup red wine
1 envelope unflavored gelatine
4 tbsp cold water
2/3 cup cocoa powder, unsweetened
1 cup sugar
2 cups whipping cream, cold
2 tsp vanilla
Cool whip to garnish
Maraschino cherries to garnish
In a a small bowl, soak the gelatin in the cold water for 2 minutes to soften.
Bring the wine to a boil in a small pan.
Pour the wine over the softened gelatin and stir until gelatin thoroughly dissolves. Let cool slightly.
Mix the sugar and cocoa powder in a large bowl.
Pour the whipping cream and vanilla in the bowl.
Use a hand mixer on medium speed to beat the mixture until it becomes stiff.
Stir in the gelatin mixture and beat until well combined.
Scoop mousse into serving cups. Chill in the refrigerator for at least 30 minutes.
Serve garnished with cool whip and topped with cherries.
