Roasted Cauliflower w/ Spicy Tahini Sauce
2 pounds cauliflower florets
2 tbsp olive oil
Spicy Tahini Sauce ingredients:
½ cup tahini
½ cup lemon juice
2 tbsp chile paste
2 cloves garlic, chopped
½ tsp salt
¼ - ½ cup water or as needed for desired consistency
Preheat oven to 500F.
Place the cauliflower florets in a single layer on a lined baking sheet.
Brush florets with olive oil and roast in the oven for about 15 minutes until golden and cooked through.
To make the spicy tahini sauce, put the tahini, lemon juice, chile paste, garlic and salt in a food processor and process until smooth.
Gradually pour in water and process to thin it out to get the desired consistency.
Serve roasted cauliflower drizzled over with the spicy tahini sauce and garnished with chopped parsley.
