Tuna with Coconut Milk
200g canned tuna fish, drained
150ml coconut milk
1 medium onion, finely diced
1 green chilly, finely diced
1 1/2 tbsp olive oil
1 tsp freshly squeezed lemon juice
1 tsp lemon zest
1 tsp cashew nut powder
1/4 tsp black pepper powder
Salt to taste
Heat the oil in a pan. Add the onion, chilly, lemon zest, cashew powder. Stir and fry for 2 minutes.
Now add the fish and fry for 3 minutes.
Add coconut milk, black pepper and cook for 5 minutes stirring occasionally.
Stir in the lemon juice. Remove from heat and serve.
