9-inch Pie Crust (pre-made)
For the Quiche:
2 cloves garlic
100g Feta Cheese
½ spring onion
500 ml heavy cream
Salt and pepper to taste
Preheat oven to 325° F.
Slice vegetables and garlic into thin slices.
Beat eggs, heavy cream and salt and pepper in a bowl until thoroughly mixed.
Sprinkle onions, garlic and about 3/4 of the cheese onto the bottom of the crust.
Pour egg mixture into the crust. It should be a little below level with the top of the pan.
Place tomato slices on top. Sprinkle the rest of the cheese on top.
Bake for 30 minutes or until it is puffed like a dome.
