Ingredients:
1 ten inch whole wheat tortilla
3-4 cooked shrimp
1 slice Mexican cheese
3 tbsp sweet corn kernels
¼ ripe avocado, sliced
1 tsp cilantro, chopped
Salt and pepper to taste
Sour cream, optional
Directions:
Place tortilla on a microwave safe plate. Put the slice of cheese on one half of the tortilla.
Spread the corn kernels over the cheese. Arrange the shrimp over the kernels.
Top with avocado slices and cilantro.
Fold the other half of the tortilla over the fillings. Press down lightly.
Microwave tortilla for 30 – 45 secs until cheese melts. Remove from microwave and slice into two pieces. Serve warm with sour cream.
