Ingredients:
2 pounds chicken breast cut into small chunks
½ cup apple cider vinegar or white Filipino vinegar
¼ cup soy sauce
1/2 tbsp. whole black peppercorns, crushed
12 gloves garlic, peeled and crushed
2 bay leaves
Directions:
Combine chicken, vinegar, soy sauce, black pepper, garlic and bay leaves in a large microwave safe bowl and cook uncovered for 10 minutes at medium power. Stir once or twice.
Cover bowl with a vented lid or plastic wrap with a slit in the center. Microwave for another 15 minutes at medium power.
Next, remove chicken pieces from the sauce and set aside in a bowl.
If desired, continue cooking the sauce until reduced and thickened.
Strain the sauce. Then combine with the chicken and toss to coat completely.
Serve adobo with rice.
