Ingredients:
1 pound shelled & deveined shrimp
½ pound spicy sausage, skinned & diced
1 cup basmati or other long grain rice, rinsed
1 can diced tomatoes
1 cup green bell pepper, diced
1 cup green onions, chopped
1 tbsp garlic, minced
2 cups chicken stock
1 tbsp Cajun seasoning
½ tsp dried thyme
1 tsp dried oregano
Salt & freshly ground black pepper to taste
Directions:
Combine tomatoes, rice, chicken stock, bell pepper, green onions, garlic, thyme, oregano, Cajun seasoning, salt and black pepper in a large microwave safe bowl. Cover bowl with plastic wrap pierced with holes and microwave on high for 10 minutes.
Stir in shrimp and sausage and mix well. Microwave uncovered for another 15 minutes or until the rice is done.
Take out bowl from microwave and let stand for 5 minutes.
Garnish with chopped green onions and serve.
