Ingredients:
2 cans pear halves in juice, drained (or use fresh pear slices)
1 cup gluten free all purpose flour (or substitute with regular all purpose flour)
1/4 unsweetened cocoa powder
2/3 cup superfine sugar
10 tbsp softened butter plus extra for greasing
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp ginger powder
2 large eggs
2 tsp vanilla extract
Chocolate sauce for topping
Ice cream for serving (optional)
Directions:
Preheat oven to 400F. Grease an 8 ½ inch square ovenproof pan with butter.
Lay the pear slices on the pan in a layer.
Place rest of the ingredients in a food processor. Process until the mixture reaches a soft dropping consistency.
Pour and spread the batter over the pear slices. Place in the oven and bake for 30 minutes.
Remove from oven and let cool for 5-10 minutes. Slice into portion sizes. Drizzle with chocolate sauce and serve with ice cream scoops if desired.
