Ingredients:
4 ears of corn, husked
1 large onion, sliced into thick rings
4 tbsp Mayonnaise (vegan)
2 cups cilantro leaves, chopped
2 cloves garlic, minced
1 green chile, minced
2 tbsp freshly squeezed lime juice
2 tbsp extra virgin olive oil
Salt & freshly ground black pepper to taste
Lime wedges for serving (optional)
Directions:
Preheat grill to medium-low heat.. Brush mayonnaise all over the husked corn ears. Grill corn for 8-12 minutes or until golden brown and lightly charred.
Grill the onion rings brushed with a little olive oil alongside the corn.
Combine the chopped cilantro, chile, garlic, lime juice, olive oil, salt and pepper in a large bowl and keep aside.
Remove the grilled corn kernels from the cobs with a knife. Combine with the cilantro mixture.
Chop the grilled onion rings and toss with the corn salsa. Adjust seasonings. Serve with sliced lime wedges if desired.
