Ingredients:
320 gr of Pici or long pasta
400gr of red cabbage
150 gr of Salamella (or sausages)
half chopped onion
half glass of white wine
50 gr of shelled pistachios
4 tablespoons of EVO oil
salt and pepper
Directions:
Bring to boil 2 liters of water in a pan and add salt.
In the same time remove the core and the outer leaves of the cabbage and wash it under running water, dry and cut it into small strips.
Put in the boiled water and cook for 20 minutes.
Boil the pistachios in hot water for few minutes, after dry them with a cloth to remove the dark film covering them.
In a large pan fry the chopped onion in EVO oil, add the pistachios and the glass of wine and let it evaporate for 5 minutes.
Now add the Salamella (or the sausages), previously cut in dice, the red cabbage and stir for 3 minutes. Don’t forget to add salt and pepper.
Cook the Pici in boiled water for the time indicated, dry and pour them in the pan with the cabbage and the pistachios, mix all for one minute.
