Pomegranate Basil Sparkler
¼ cup pomegranate juice
1 tbsp basil simple syrup
Sparkling apple cider (substitute with sparkling wine for alcoholic option)
1 tbsp lime juice
Splash of brandy (optional)
Basil simple syrup ingredients:
¼ cup water
1/3 cup sugar
Few basil leaves
To make the simple syrup, mix the water, sugar and basil in a pan over medium heat. Bring to a boil and remove from heat. Let the basil leaves steep for 5 minutes. Strain the syrup and discard the leaves. Store the syrup for later use.
Mix simple syrup and pomegranate juice in a champagne flute.
Pour sparkling cider in the glass and fill it up. Add a splash of brandy for an alcoholic option.
Garnish with pomegranate arils, basil leaves and serve.
