Fruit & Nut Energy Bites

1 cup toasted oats
½ cup cashew nuts
½ cup dried figs
½ cup dried apricots
½ cup almond butter
¼ cup unsalted sunflower seeds
¼ cup unsalted pumpkin seeds
Pinch of salt
4 tbsp maple syrup
Toast oats on a non-stick pan over medium high heat for 5-7 minutes until oats turn golden brown.
Place the oats, apricots, figs, cashews, sunflower seeds, pumpkin seeds, salt and almond butter in a food processor. Pulse until the mixture is well blended.
Add the maple syrup and pulse until smooth.
Place mixture in a lined pan. Press evenly all around and leave in the refrigerator for about 2 hours or until firm enough to form into balls.
Remove from fridge, scoop a spoonful into the palm of your hand and shape into balls. Serve at room temperature.
