Prawn Curry with Coconut Milk Recipe
750 grams prawns
500 ml coconut milk
1 tsp turmeric powder
1 tsp chili powder
1/2 tsp Kashmiri chilli powder ( substitute w/ mix of paprika & cayenne)
2 tbsp mustard oil
1/2 tsp salt
1/2 tsp sugar
1/2 tsp cardamom, cinnamon & clove powder
1/2 cup water
Scale and devein the prawns. Rinse well and pat dry.
Grind ginger into a paste. Slice onions into thin slices.
Heat oil in a large pan over medium high heat. Fry onions until browned.
Add the ginger paste and other spices and stir fry for 1 minute.
Add the prawns and stir fry for 5 minutes.
Then pour in the coconut milk. Add salt and sugar and mix thoroughly.
Cover and cook for 5 minutes. Remove from stove.
Serve prawn curry with rice.
