Moroccan Style Beet Salad
This healthy beet salad recipe is a twist on the traditional Moroccan carrot salad dressed with Sriracha vinaigrette.
3 large beets, peeled & grated
2 cups fresh parsley leaves, chopped
1 1/2 cup feta cheese, crumbled
1 cup raisins
1/4 cup extra virgin olive oil
Freshly squeezed juice from 3 lemons
2 tbsp Sriracha
1/2 tsp salt
1/4 cup chopped almonds
Combine the grated beets, parsley, feta cheese and raisins in a salad bowl and toss.
Whisk the olive oil, lemon juice, sriracha, and salt in a small bowl until blended.
Drizzle the dressing over the beet salad and toss to coat well. Top with chopped almonds and serve.
